- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 green bell pepper
- ½ cup chopped onion
- 1 medium sweet potato
- ½ cup beef broth
- ¼ cup tomato sauce
- 1 teaspoon minced garlic
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon cumin
- ½ teaspoon salt
- 1 can black beans 15.25 ounces
Chop the bell pepper, onion and peel and chop the sweet potato into small chunks.
Heat the oil in a large skillet over medium-high heat. Add the ground beef, chopped green pepper and diced onion. Cook, stirring often, until the beef is browned and the veggies are softened—this should take about 5–7 minutes.

Stir in the sweet potatoes, broth, tomato sauce, garlic, and spices. Cover and cook over medium heat, stirring occasionally, for 9–11 minutes, or until the sweet potatoes are tender.

If using ground turkey or chicken, add a little oil or coat the skillet with cooking spray before cooking. If using ground beef with a higher fat content, drain the excess grease after browning.
Cut the sweet potato into small, evenly sized pieces so it cooks quickly and evenly.
One medium sweet potato yields about 1½ cups diced.
