Instructions

  • Chop the bell pepper, onion and peel and chop the sweet potato into small chunks.

1 medium sweet potato, ½ cup beef broth, ¼ cup tomato sauce, 1 teaspoon minced garlic, 1 teaspoon chili powder, ½ teaspoon smoked paprika, ½ teaspoon cumin, ½ teaspon salt
  • Pour in the drained and rinsed beans. Give it a good stir, cover again, and cook for another 2 minutes, or until everything is heated through.
    1 can black beans

Notes

If using ground turkey or chicken go ahead and add a little oil or spray the pan with cooking spray. If not using lean ground beef you'll need to drain off the excess fat.
Be sure to cut the sweet potato into small chunks so it cooks quickly.
I usually get about 1 ½ cups from one medium sweet potato.
