- Onion: Yellow onion is my preference, but white or red onion can be substituted.

Brown the ground beef with the onion and bell pepper.

Stir in the sweet potatoes, tomato sauce, broth, garlic, and seasonings. Cover and cook until the potatoes are tender.

Stir in the black beans.

Cover and cook for another 1 to 2 minutes until everything is heated through.
Storage & Reheating
- Store leftovers in an airtight container in the fridge for up to 3 days.
- To reheat, microwave in 45-second intervals, stirring in between, until heated through. You can also warm it up in a skillet over medium heat—just add a splash of water or beef broth if it seems a little dry.

Ingredients
- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 green bell pepper
- ½ cup chopped onion
- 1 medium sweet potato
- ½ cup beef broth
- ¼ cup tomato sauce
- 1 teaspoon minced garlic
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon cumin
- ½ teaspoon salt
- 1 can black beans 15.25 ounces
Instructions
- Chop the bell pepper, onion and peel and chop the sweet potato into small chunks.
- Heat the oil in a large skillet over medium-high heat. Add the ground beef, chopped green pepper and diced onion. Cook, stirring often, until the beef is browned and the veggies are softened—this should take about 5–7 minutes.1 tablespoon olive oil, 1 pound lean ground beef, 1 green bell pepper, ½ cup chopped onion
