Ingredients

  • 1 pound pork tenderloin
  • 2 tablespoons olive oil divided
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat oven to 400°.
  • Combine seasonings in a small bowl.
    1 teaspoon Italian seasoning, 1 teaspoon garlic powder, ½ teaspoon salt, ½ teaspoon black pepper
  • Trim any large pieces of fat from the pork tenderloin. Pierce all over with a fork and rub with 1 tablespoon of the olive oil and the spice mixture. 
  • Heat the remaining tablespoon of oil in an oven-safe skillet or dutch oven over medium-high heat. Brown on all sides, about 5 minutes. (You could transfer the it to a sheet pan if you don't have an oven-proof skillet or other pan).
  • Roast in the oven for 15-17 minutes or until a meat thermometer reads between 145° and 160°. Let the pork rest for 5-10 minutes before serving.

Notes

You'll most likely need to hold the tenderloin up when searing the two short sides, since it probably won't stand on its own—I use tongs for this.
