Herb Roasted Red Potatoes Recipe

Ingredients

  • 1 ½ pounds red potatoes about 5 medium
  • 2 teaspoons olive oil
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat oven to 425°.
  • Wash potatoes and cut into cubes, about 1".
  • Place in a single layer on a sheet pan and drizzle with olive oil. Season with Italian seasoning, salt and pepper, toss to coat.
  • Roast in the oven until golden brown, about 30 minutes.

Notes

Dry the potatoes thoroughly before roasting—excess moisture can cause them to steam instead of crisping up.
For best results, line the baking sheet with parchment paper or aluminum foil to prevent sticking. Without it, the potatoes will most likely stick to the baking sheet.
For extra crispy potatoes, increase the cooking time by 5-10 minutes. Just keep an eye on them to avoid overcooking.
