No Roll Sugar Cookies

These No Roll Sugar Cookies are soft, fluffy, and super easy to make! Just drop the batter, flatten slightly, sprinkle with sugar, and bake—no rolling pin needed. Totally customizable with colored sugar for any holiday or theme, and sturdy enough to send to school, pack in lunches, or bring to a party.

Ingredients

  • 2 ½ cups flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup margarine
  • 1 cup sugar
  • 1 egg
  • 1 ¼ teaspoons vanilla
  • 2 tablespoons milk

Instructions

  • Pre-heat oven and prepare the pans: Preheat to 400°F. Coat a baking sheet with cooking spray or shortening, or line with parchment paper.

  • Mix the dry ingredients: In a small bowl, sift together flour, baking soda, and salt; set aside.

  • Cream the wet ingredients: In a large bowl, use an electric mixer to cream margarine and sugar until fluffy. Beat in egg and vanilla.

  • Combine wet and dry: Gradually add the flour mixture, beating until combined, then mix in milk.

  • Form the cookies: Drop rounded teaspoonfuls of batter onto the prepared sheet pan. Flatten each slightly with the bottom of a glass dipped in sugar crystals.

  • Bake and cool: Bake 8–10 minutes, or until edges are lightly browned. Let cool on a wire rack.

Notes

Type of butter makes a big difference: This recipe works best with margarine, not real butter. Butter makes the cookies spread more and they lose that fluffy texture we love. Using margarine keeps them soft, light, and just right.
Up to ¼-½ tsp of the vanilla extract can be substituted with almond extract for a more nutty flavor.   
I use a cookie scoop that's holds about one tablespoon. 
I spray the bottom of the glass with a tiny bit of cooking spray the first time, so the sugar will stick.
