Roasted Brussels Sprouts with Apples

Ingredients

  • 1 pound Brussels sprouts
  • 1 apple
  • 1 ½ tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat oven to 425° and spray a rimmed baking sheet pan with cooking spray.

  • While the oven preheats trim the ends off the Brussels sprouts and cut in half or quarters if they are very large, chop the apple.
    1 pound Brussels sprouts, 1 apple
  • Spread the Brussels sprouts and apples onto the sheep pan in a single layer. Drizzle with with olive oil and sprinkle with salt and pepper; toss to coat.

  • Roast for 25-30 minutes or until brown.

Notes

Some of the Brussels sprouts will be very brown and the loose pieces will get crispy. 
If your Brussels sprouts are very small make the apple pieces small too and reduce the cooking time a little bit.
