    Mint Chocolate Rice Krispies® Drops: A light and airy dessert or snack that pairs cool minty chocolate with just the right amount of crunch!

    I love the holidays because I make all kinds of treats, and every year I try to come up with something new to make. This year I decided to make Mint Chocolate Rice Krispies® Drops because they are so easy (and yummy!).

    I wanted to get my daughter in the kitchen with me, and the best way to do that is by enticing her with easy to make recipes. We love making Kellogg’s® Rice Krispies® treats together, so I thought an easy recipe similar to that would be perfect.

    This recipe is great to get kids of all ages in the kitchen. Everyone loved them, adults included, so it would be great to teach the kids about giving by letting them give these out to friends and family.

    My daughter’s friend loved receiving Mint Chocolate Rice Krispies® Drops as a gift, and everyone at the party loved them too.

    This recipe only requires 3 ingredients (sprinkles not included), just like original Rice Krispies® Treats! I used red and green sprinkles for this holiday season. You could leave the sprinkles off altogether, or even change the color to match a specific holiday or party theme.

    Mint Chocolate Rice Krispies® Drops go great with a glass of milk or cup of coffee!

     

    We love eating Rice Krispies® for breakfast (and sometimes a late night snack), and it is fabulous when we can make treats out of ingredients we all ready have on hand.

     

    I buy my Rice Krispies® at Walmart because they have such a great selection (and price).

    Ingredients
      

    • 4 cups Kellogg's® Rice Krispies®
    • 2 cups milk chocolate chips
    • ½ cup mint chocolate baking morsels
    • sprinkles optional
    Prevent your screen from going dark

    Instructions
     

    • Place chocolate chips into a large microwave safe bowl and microwave in 30 second intervals, stirring each time, until chips are melted.
    • Stir in Rice Krispies® and mint chocolate morsels until well combined.
    • Drop by rounded teaspoonfuls onto a parchment lined cookie sheet. Refrigerate until set, approximately 1 hour.

    Notes

    Microwaves vary, so be careful not to overheat your chocolate. I heated mine for 30 seconds, stirred it and then heated it for 30 more seconds. At that point I just stirred it until all the chocolate chips were melted. So it took 1 minute to melt my chips.
    I used a small cookie scoop to measure my drops.
    Store Mint Chocolate Rice Krispies® in the refrigerator, for best results.
