We love Mexican food at our house! I make a batch of Chipotle Style Grilled Chicken and we make tacos or these Grilled Chicken Burrito Bowls.
They are so flavorful and we can personalize them to suit our own personal taste.
When it comes to food from foreign lands it is a toss up for us between Mexico and Italy.
We really love both, and would be hard pressed to make a choice between the two.
As far as eating them out, there are only a few Italian restaurants in Wichita, but there are Mexican restaurants on just about ever corner (not literally, but you get the idea).
We have ate at a lot of them, and have our favorites.
Our most favorite is only about 5 minutes from our house, but it is standing room only during meal times, so we only eat there if we are eating at off times.
We enjoy making many Italian and Mexican dishes at home anyway, so no worries.
I chose to go the easy route for this recipe. Instead of making quacamole, I just use plain avocados.
And instead of making pico de gallo, I just use chopped tomatoes. Since I usually use leftover Chipotle Style Grilled Chicken for this dish, I wanted it to be a matter of just warming a few ingredients and throwing them in a bowl and having a meal.
You could certainly use guac and pico if you have them on hand.
I just love dishes that use leftovers and are super easy (and yummy!) like this Grilled Chicken Burrito Bowl.
This is a pretty healthy dish as well, and that makes it that much better.
Grilled Chicken Burrito Bowls
Ingredients
- 2 cups cooked rice
- 1 can black beans warmed (15.25 ounces)
- 2 cups Chipotle Style Grilled Chicken
- 1 cup salsa
- 2 cups Romaine lettuce chopped
- 1 cup grated jack cheese
- 1/2 - 1 cup sour cream
- 1/2 - 1 cup tomatoes diced
- 1 avocado cut into slices
Instructions
- To assemble bowls: Layer 1/2 cup rice, 1/4 can black beans, 1/2 cup chicken, 1/4 cup salsa, 1/2 cup lettuce, 1/4 cup cheese, 1/8 - 1/4 cup sour cream, 1/8 - 1/4 cup diced tomatoes and 1/4 sliced avocado in a bowl.
- Add avocado or guacamole, if desired.
