My adult kids are absolutely obsessed with this dish, and honestly, same. We officially ditched the boring buns and upgraded our Sloppy Joe game with a crispy, golden layer of tater tots.
Think of those nostalgic, classic Sloppy Joe flavors you crave—savory ground beef, snappy bell peppers, onions, and spices in a rich, tangy sauce. But instead of the usual bread, we layer on frozen tater tots and a generous layer of shredded cheese, then bake it until those tots reach peak crispiness.
And because we don’t do boring around here: we hit it with another layer of cheese right at the end. Because why not? It’s cheesy, it’s crunchy, and it’s absolute comfort food perfection.

How Long to Cook Sloppy Joe Tater Tot Casserole
Bake at 400°F for 25–30 minutes, or until the tater tots are golden brown and crispy and the casserole is hot and bubbly around the edges.
If you prefer extra crispy tots, you can bake for an additional 5 minutes or broil for 1–2 minutes at the end.

- Sloppy Joe Sauce: I use my homemade sloppy joe mixture for the best flavor, but you can substitute 1 (15 oz) can of sloppy joe sauce (like Manwich) if you need a shortcut.
- Tater Tots: Any brand of frozen tater tots will work. You can also use crispy crowns, but they may cook a little faster.
- Cheese: I use colby jack or cheddar. Freshly grated melts best, but pre-shredded cheese can be used.

Spread the sloppy joe mixture into an even layer in the skillet.

The tater tots can be lined up neatly or just dumped on top—both work great.
Can You Make This Ahead?
This casserole is best assembled and baked right away. The sloppy joe mixture is cooked on the stovetop, and the tater tots go on frozen so they crisp up properly in the oven. Assembling it ahead can lead to softer tots and a longer bake time.
You can make the sloppy joe mixture ahead of time and refrigerate it until ready to use. The casserole may need extra time in the oven since the filling will be cold.
Storage & Reheating
Store leftover tater tot casserole in an airtight container in the refrigerator for up to 3 days.
Oven: Reheat at 350°F for 10–15 minutes, or until heated through, to keep the tater tots crispy.
Microwave: Heat on high for 1–2 minutes (tots will be softer).

Sloppy Joe Tater Tot Casserole
Ingredients
- 1 pound ground beef
- ¼ cup onion
- ¼ cup green bell pepper
- ¾ cup ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon brown sugar
- 1 teaspoon garlic
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 bag frozen tater tots 32 ounces
- 2 cups shredded cheese
Instructions
- Make the sloppy joes: Chop the onion and bell pepper. In a large oven-safe nonstick skillet over medium-high heat, cook the ground beef, onion, and green pepper until browned, about 6–8 minutes. Reduce the heat if the beef cooks too quickly.
