Why wait in line for your favorite Starbucks treat when you can whip up this easy sugar cookie syrup at home with just three simple ingredients: sugar, vanilla extract, and almond extract?

A bottle of sugar cookie syrup with a label with red text.

I am all about figuring out how to make homemade versions of my favorite coffee drinks using the easiest method and fewest ingredients possible. While researching what might be in a Starbucks Sugar Cookie Latte I found that their “at home” version of this recipe only has these three things in it. It’s basically a simple syrup (equal parts water and sugar) with vanilla and almond extracts added.

These ingredients are easy to keep on hand so you can make this recipe any time you want. And while this syrup is for seasonal drinks making it at home means you don’t have to wait until the holiday season to enjoy it.

    Ingredient Notes

sugar – I use regular white sugar, light brown sugar can be used to accomplish a warmer flavor.

flavoring – we use almond extract and vanilla extract. I have seen recipes for this that call for butter extract or cake batter extract. Sugar cookies do have a buttery taste so you can add that in if you want. Anywhere from ½ to 1 teaspoon of either, depending on how much butter of cake flavor you want.

How to Make Sugar Cookie Syrup at Home

    1. Combine sugar and water in a small saucepan and heat over high heat until boiling. Reduce to medium heat and stir until the sugar dissolves, about 2-3 minutes.
    2. Take off the heat and add the almond and vanilla extracts.
    3. Allow to cool to room temperature and store in an airtight container in the refrigerator.

    Sugar cookie latte recipe

    Ingredients

    • 2 cups strong hot coffee
    • 1 cup whole milk (can substitute with soy milk, oat milk, coconut milk, or almond milk)
    • ¼ cup white chocolate chips
    • 2 tbsp homemade sugar cookie coffee syrup

    Instructions

    1. Dip the rim of the coffee mug in sugar cookie syrup and then sanding sugar, this is optional.
    2. Place white chocolate chips and syrup in the bottom of a coffee mug, pour hot coffee over them and stir until melted.
    3. Warm the milk in the microwave in a mason jar, put the lid on and shake vigorously to make the frothy milk (you can use a milk frother if you have one) pour over the coffee mixture and enjoy!

To make an iced sugar cookie latte you will need to melt the chocolate chips in a small amount of hot coffee and add the remaining cold coffee, cold milk and ice. Froth the milk in a glass jar with a lid just like if it were hot milk.

Other ways to use sugar cookie syrup

Use this syrup in your morning coffee, other hot drinks, cold brew, and cocktails. Whip it into heavy cream to make sweet cream. It’s also delicious over ice cream. It can be used anywhere a liquid sweetener would be used.

    Storage

Store in a glass jar or bottle in the refrigerator for about a month.
