This recipe is very close to Starbucks pumpkin spice syrup recipe. You can make it at home and skip the long line at the coffee shop. But, this diy pumpkin spice syrup isn’t just for coffee drinks, it’s also great in hot chocolate or warm milk. You can use it as a topping on ice cream. We also mix some together with maple syrup and eat it on french toast and pancakes.
We are weirdos and make our own pumpkin spice drinks and eat pumpkin desserts any time of year. We have pumpkin chocolate chip cookies in our cabinet right now and it is July. We actually buy a baked good at our local grocery store every Friday night as a special treat for making it through another long week of work (phew!) and we are always able to buy pumpkin cookies, so they stay in our regular rotation.

Ingredient Notes
Four simple ingredients are all you need to make your own pumpkin spice syrup!
Brown Sugar – we like the light variety for this recipe. Granulated sugar will work, we just like the flavor we get from the brown sugar.
Real Pumpkin Puree – be sure to use solid pack pure pumpkin and not pumpkin pie filling. I like canned pumpkin because we can make this all year long. You can use homemade pumpkin puree if sugar pumpkins (also known as pie pumpkins) are in season. the kitchn has a great article about the best pumpkins to use for baking and cooking.
Vanilla – pure vanilla extract and not imitation vanilla.
Pumpkin Pie Spice – we usually buy a container of pumpkin pie spice. You can make your own, there is an easy recipe below if you want to make your own.
Water – we use regular tap water.
How to Make Our Homemade Pumpkin Spice Syrup Recipe
- Whisk the water, brown sugar, pumpkin purée, vanilla and pumpkin pie spice together in a small saucepan.
- Bring to a boil over medium-high heat, lower to medium heat and simmer for about 5 minutes, whisking occasionally, until the sugar dissolves and the mixture thickens a bit. Lower heat as necessary to maintain a simmer.
- Remove from heat and allow to cool a bit before pouring into an airtight container. You can pour the hot liquid into a heatproof glass jar such as a mason jar.
Storage
Store in an airtight container at room temperature for a few days and in the refrigerator for up to a month.
How to Make Homemade Pumpkin Spice
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground allspice
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
Mix together in a small bowl and store in an airtight container.
How to Make Pumpkin Spice Coffee – Hot or Iced
- Add 1-2 teaspoons of pumpkin spice syrup to a hot cup of coffee, add some milk if you like, and top it with whipped cream and a sprinkle of additional pumpkin pie spice.
- To make iced coffee I recommend adding the syrup to hot coffee and then let it cool to at least room temperature before adding ice and any milk or toppings.
How to Make Starbucks Pumpkin Spice Lattes
You will need:
1 ounce brewed espresso (or very strong coffee if you don’t have an espresso maker)
3 tablespoons pumpkin spice syrup
1 cup whole milk
1/2 cup whipped cream
Pinch pumpkin pie spice
Stir espresso and pumpkin syrup together in a coffee mug, fill mug to 3/4 full with heated or frothed milk and top with whipped cream and a sprinkle of pumpkin spice.
What’s the difference between pumpkin syrup and pumpkin sauce?
Pumpkin spice sauce has dairy, usually sweetened condensed milk, where the syrup is dairy free. The sauce is also thicker, think caramel sauce.
