    Ingredient Notes

    • Coffee: We use very strong coffee when making flavored drinks at home so it’s closer in strength to a shot of espresso. You can use instant coffee or espresso, just heat your water in the microwave.
    • Oat Milk: It wouldn’t be an oat milk latte without it, but you can use any dairy-free milk you prefer. And of course, this can be made with cow’s milk if you’re not trying to be dairy-free.
    • Pumpkin: Be sure to look for canned pumpkin puree and not pumpkin pie filling, since that has added sweeteners and spices. Have leftover pumpkin? Make these Pumpkin Pancakes with Pancake Mix or check out the Pumpkin Dessert section for ideas to use it up.
    • Maple Syrup: A great natural sweetener in liquid form that blends easily into hot coffee. You can also use white or brown sugar — just be sure to stir well so it dissolves completely.
    • Vanilla: I like using pure vanilla extract, but vanilla flavoring works fine if that’s what you have.
    • Pumpkin Pie Spice: This gives our homemade PSL that signature coffee shop flavor. It’s usually made with ground cinnamon, nutmeg, ginger, cloves, and allspice. If you don’t have any, a little cinnamon adds warmth and flavor.

    How to Make Homemade Pumpkin Spice Latte with Oat Milk

    Here’s a quick look at the steps (with photos). You’ll find the full list of ingredients and more detailed instructions in the recipe card below.

    Mix the Flavor Base: Add the pumpkin puree, maple syrup, vanilla, and pumpkin pie spice to a large coffee mug.

    Add the Coffee: Pour the hot coffee over the pumpkin mixture and stir well until everything is smooth and combined.

    Heat and Froth the Milk: Pour the oat milk into a microwave-safe jar or container with a lid (a mason jar works great!). Heat for 30–60 seconds, or until hot. Place the lid on and carefully shake to froth, then pour it into your mug.

    Frequently Asked Questions

    Can I make this iced?

    Definitely! Add the hot coffee to the pumpkin mixture, then let it cool and pour it over ice and skip heating the milk. It’s delicious cold too.

    Can I make this ahead of time?

    You can mix the pumpkin, maple syrup, vanilla, and pumpkin pie spice together and store it in and airtight container in the fridge for a few days. Just add hot coffee and oat milk when you’re ready to enjoy. You may want to microwave the pumpkin mixture for a few seconds so it’s not ice cold. 

    What’s the best oat milk for lattes?

    Extra creamy or a “barista blend” oat milk froths best, but any kind will work for this recipe. I usually use regular oat milk because it’s more affordable and I can use the rest in other recipes (like this Brown Sugar Oat Milk Coffee).

    Ingredients
      

    • 2 tablespoons pumpkin puree
    • 1 tablespoon maple syrup
    • ¼ teaspoon vanilla

    • 1 cup very strong coffee
    • ¾ cup oat milk

    Notes

    You can use a milk frother if you have one, but I don’t, so I just use the method described above. You can also warm the milk in a small saucepan on the stove — just watch it closely because milk can boil over easily. I use this same technique for my Sugar Cookie Latte, and it works perfectly every time.
    This can be made with instant espresso—just heat one cup of water and add it along with the espresso when you would normally add the hot coffee.
