Roasted Zucchini & Summer Squash is an easy and healthy side dish!
I try to make healthy and simple recipes that don’t take too much time to prepare or too many ingredients.
This is one of our go-to vegetable dishes.
Admittedly, neither of my kids will eat zucchini or summer squash.
So, I would make it for Lee and I and make something else for the kids.
Now that we are empty nesters I cook less dishes than before.

Do you need to arrange the squash in a single layer on the baking sheet?
This depends…. Do you care if it is browned?
If you do then you need to arrange the squash in a single layer on the baking sheet.
We usually eat this Roasted Zucchini & Summer Squash with meat and potatoes.
I will make pork chops, meat loaf, or steak in the oven on a sheet pan too, along with the potatoes.
Since the center of the oven is the best place to cook things, and only two sheet pans will fit on one rack, I have to load them up.

Roasted Zucchini & Summer Squash
Ingredients
- 1 medium zucchini about 12 ounces
- 1 medium summer squash about 12 ounces
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ - ½ teaspoon pepper or to taste
Instructions
- Preheat oven to 425°.
- Wash and dry squash. Slice into ¼" slices discarding the ends.
- In a large bowl toss squash with olive oil, salt and pepper.
- Put on a large rimmed baking sheet and bake 7-9 minutes or until squash is tender.
