Roasted Ranch Potatoes
This is a flavorful recipe for roasted potatoes using Hidden Valley Ranch dressing mix.
- 1 1/2lb baby red, gold or yellow potatoes (or you can use larger red, gold or yellow potatoes cut into bite-sized pieces)
- 2 tablespoons olive oil
- 1 packet Hidden Valley Ranch dressing mix (1 ounce)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
||Preheat oven to 425 degrees. |
||Prepare sheet pan; lightly coat with oil or cooking spray or line with aluminum foil (I use Reynolds nonstick foil). |
||Spread potatoes on prepared pan in a single layer. Drizzle with olive oil then add the Ranch Dressing, salt and pepper; gently toss to evenly coat. |
||Place in the oven for 25-30 minutes, or until brown. |
The potatoes will roast more evenly if they are all about the same size. Some of mine were so small that I left them whole, others I cut in half because they were quite a bit larger than the others. If using larger potatoes just cut them so they are all about the same size. You could also use Russet potatoes but you will have to increase the roasting time.
