    I’ve got yet another yummy potato recipe for you today! I just love how versatile potatoes are. I picked up everything I needed to make these Baked Cheesy Mashed Potato Cups at Walmart, including the Scotch Brite™ Brand Sponges to make clean up easier on my husband.

    As I have mentioned before, I am such a lucky gal because, Lee (my husband), cleans up the dishes every night after I make dinner.

    So, I always consider clean up when I am meal planning.

    I really love cheese and potatoes, so not making this dish because the pan would be hard to clean up was not an option.

    We hand wash all of our baking pans because they rust if we put them in the dishwasher, so I needed to find a product that would allow me to have my cheesy potatoes and help Lee get in and out of the kitchen quickly.  

    One thing I can do to make his life easier is make sure he has the right tools to speed up his clean up time.

    That is why I chose Scotch Brite® Scrub Dots products.

    For pots, pans and casserole dishes he uses the Scotch Brite® Heavy Duty Scrub Dots Sponge. 

    The little dots make cleaning this pan super easy.

    For cleaning up the stove, counters and table he uses the Scotch Brite® Non-Scratch Scrub Dots Sponge.

    This sponge is especially helpful because he can use the side with the dots to get up any dried on foods, then turn it over and use the sponge side to wipe it up.

    We all use the Scotch Brite® Heavy Duty Scrub Dots Dishwand.

    We just leave it on the sink for any dishes we hand wash.

    It is especially good on our to-go cups because Lee’s hand doesn’t always fit into tall, skinny cups too well.

    And, the soap is already in there! How handy is that?!

    I use fresh mashed potatoes, but you could use leftover or store bought potatoes.

    I would warm them a little in the microwave if they are cold.

    This recipe couldn’t be easier! Just 6 ingredients are all you need.

    The bacon can be cooked ahead of time, making this very quick and easy.

    I love the concept of being able to eat mashed potatoes with your hands.

    Ingredients
      

    • 3 cups prepared mashed potatoes
    • 3 strips thick cut bacon cooked, crumbled and divided
    • 1 1/2 cups cheese divided
    • 1 egg lightly beaten
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    Prevent your screen from going dark

    Instructions
     

    • Preheat oven to 350°. Spray 12 muffin cups with nonstick cooking spray.
    • In a medium bowl mix mashed potatoes, 2 strips of crumbled bacon, 1 cup cheese, egg, salt and pepper. Divide between cups and lightly press down with the back of a spoon.
    • Bake for 30-35 minutes or until hot. Top with remaining strip of crumbled bacon and 1/2 cup of cheese, return to the oven until cheese is melted, about 2-3 minutes. Let stand 5 minutes.
    • Run a butter knife around edges and remove from muffin cups.

    Notes

    If using cold mashed potatoes heat in the microwave until slightly warm. I used cheddar cheese, but any kind of cheese would be good.
