    Rolo Stuffed Ritz Crackers

    Looking for an easy and unique party snack idea? These Rolo Ritz cookies are so quick and easy, making them a great option if you need a last minute treat to take to work, a gathering or to make for the kids to take to school for a party.

    I made treat bags for my co-workers at Christmas time with Chocolate Covered Pretzel Rods, Sugar Cookie Christmas Fudge, Soft Oatmeal White Chocolate Chip Cranberry Cookies, Peanut Butter Cookies and these Rolo Stuffed Ritz crackers. They were all a huge hit! Many people said they loved these because the Ritz crackers and the Rolo candies were the perfect balance of salty and sweet. 

    I liked these the best because Rolo chocolates have been one of my favorite candies since I was a little girl. I remember walking to the corner store and getting a package of them for $0.25!

    Ingredients

    You just need two crackers and one candy for every Rolo Ritz treat.

    A bag of Rolo candies and a box of Ritz crackers.

    What you’ll need to make Rolo cookies

    • Ritz crackers
    • Rolo candies
    • cookie sheet

    How to make Ritz Rolo treats

    1. Preheat the oven to 350° and unwrap Rolos.
    2. Place half of the Ritz crackers onto the baking sheet face side down, place one unwrapped Rolo candy on the center of each cracker and bake for 3-5 minutes or until the candy begins to melt. 
    3. Place the second cracker onto the melted Rolo face side up pressing slightly. 
    4. Let set up about 5 minutes. 

    Tip

    You can line the baking sheet with parchment paper if you want, I find it isn’t necessary.

    Can I dip these in melted chocolate?

    Absolutely! You can use melted milk chocolate chips, white chocolate chips, candy melts or chocolate bark. You can dip half or the whole thing in chocolate then put them on a piece of parchment paper. 

    Or you could place them on a cooling rack and drizzle chocolate over the top of each cracker for a fun look. 

    Sprinkles or non pareils can also be added to the chocolate before it sets up to give these a festive look.

    Storage

    Store in an airtight container at room temperature.
