    Peanut Butter & Jelly Baked Oatmeal

    You’ll love how this easy peanut butter and jelly oatmeal bake comes together in just one bowl. Plus, it’s made with simple ingredients like quick oats, creamy peanut butter, sweet jelly, eggs and a little sugar. 

    This dish is packed with whole grains making it a healthy breakfast. It heats up well in the microwave, so it’s a great meal prep breakfast option.

    I am definitely a peanut butter lover and use it in dishes for breakfast, lunch, snacks, dessert and even dinner. My Peanut Butter Chicken is a big hit for dinner, and my Air Fryer PB & J is a great way to take an ordinary peanut butter and jelly sandwich to the next level.

    Ingredient Notes

    oats – I like quick cooking oats for this recipe because it has a more cake-like texture than it would if I used rolled oats. You can use either type of oats. I have not tried this recipe using steel cut oats so I am not sure how it would turn out. 

    peanut butter – use your favorite kind and type. We use Jif regular peanut butter because we like the creamy texture, you can use crunchy or natural peanut butter if that is what you have. 

    jelly – we used strawberry preserves for the recipe you see in the photos. You can use any type of jam you like, we’ve used grape and raspberry jam, as well as orange marmalade and apricot preserves. 

    milk – I like regular milk but non-dairy milks such as unsweetened oat milk, unsweetened almond milk, unsweetened soy milk or unsweetened coconut milk will work. 

    eggs – eggs help make this dish more cake-like. 

    sugar – I use either regular granulated sugar or sometimes brown sugar, coconut sugar or a sugar substitute will also work. To use maple syrup instead of sugar you will use ¼ cup. 

    baking powder – a leavening agent helps make our baked oats tender and rise better. 

    salt – enhances the flavor and helps improve the effectiveness of the baking powder for better texture. Regular salt, kosher salt or sea salt will all work.

    How to make baked oatmeal with peanut butter and jelly

    1. Preheat the oven to 350° and spray a square baking dish with non-stick cooking spray.
    2. In a large mixing bowl combine all of the ingredients together, except the jam. 
    3. Pour the oat mixture into the prepared casserole dish, drop teaspoonfuls of jam onto the oats and swirl using a knife. 
    4. Bake 30-35 minutes or until it starts to slightly brown on the edges and feels firm to the touch. 
    5. Let cool 10-15 minutes before cutting. 

    Recipe note – because of the jelly this has a soft texture so we serve it in a bowl.

    Variations

    • Try a different nut butter, such as almond butter or cashew butter. 
    • Vanilla extract can be added for additional flavor, about 1 teaspoon. 

    Storage and reheating

    Store leftover baked pb&j oats in and airtight container in the refrigerator for 3 or 4 days. Reheat individual serving in the microwave.

    Ingredients
      

    • 2 cups quick oats
    • 2 eggs
    • 1 ½ cups milk
    • 1 cup peanut butter
    • ⅓ cup sugar
    • 1 teaspoon baking powder
    • ¼ teaspoon salt
    • ½ cup jelly
