    Garlic Lemon Fresh Green Beans – Fresh green beans that are blanched, drained and then healthfully fried in olive oil with garlic and lemon.

    Yes, these Garlic Lemon Fresh Green Beans are “healthfully” fried because I use olive oil.

    Just in case you were wondering.

    You may be thinking right now, after reading the headline above, if healthfully is a word.

    I wondered the same thing after I typed it.

    So I looked it up and it is! Haha!

    That recipe I made up myself and have been cooking them that way for years.

    This recipe for Garlic Lemon Fresh Green Beans comes from Martha Stewart.

    Martha’s recipe is very similar to my original recipe, with the addition of sliced lemon.

    And, since Lee loves everything lemon and I love just about everything lemon that is savory, I had to give it a try.

    We really love the little zing it gives the green beans – they have such great flavor with the lemon, garlic, salt and pepper.

    You may wonder what exactly it means to blanch something (usually vegetables). It basically means to cook in boiling water for a short time.

    Normally when blanching a vegetable it is placed in ice water immediately after cooking.

    This recipe omits the ice water bath part because you cook the green beans again in a skillet.

    Hey, if Martha can call it blanching without the ice water bath, then so can I. Right?!

    I used the same skillet, instead of dirty-ing another pan to blanch the green beans.

    We are trying to eat less salt so I didn’t salt the water I blanched the beans in.

    I added a little salt when I sautéed the beans with the garlic.

    I usually serve these Garlic Lemon Fresh Green Beans with Mini Meat Loaf or Crock Pot Roast Beef & Brown Gravy or Beef Stroganoff {Lighter Version}.

    Ingredients
      

    • 1 pound fresh green beans trimmed
    • 1 tablespoon olive oil
    • 1 tablespoon minced garlic
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 lemon thinly sliced and cut in half
    Prevent your screen from going dark

    Instructions
     

    • Place green beans in a skillet and cover with water. Bring to a boil over medium-high heat. Boil for 6 minutes.
    • Drain and return to the skillet over medium heat. Add olive oil, garlic, salt, and pepper and cook for 1 minute. Add sliced lemons and cook for an additional 1-2 minutes. Serve warm or at room temperature.

    Notes

    I cut my green beans so they are bite-sized. You can leave them long if you like and it won't change the cooking time. The lemon I used yielded about 7 slices, then I cut the slices in half. This recipe is very garlicky, you can cut the amount down to a couple of teaspoons if desired. I used the minced garlic that comes in a jar, without the liquid.
