    Ingredient Notes and Substitutions

    • Dates: I like using Medjool dates for this recipe because they’re large and have the best texture and flavor. These can be found pitted and that’s what I get so this even easier to make. If you’re looking for a more affordable and widely available option, regular dates (like Deglet Noors) will work just fine. I find these dates in the produce section at my local Dillons (Kroger) store.
    • Goat Cheese: I use plain goat cheese that comes in a log, usually found in the deli section of most grocery stores. You can also use a flavored variety if you want to switch things up. Dates can be stuffed with cream cheese, blue cheese, brie cheese, or even peanut butter or other nut butter.
    • Walnuts: These add a great nutty flavor and a little crunch that balances the creamy filling. Chopped pecans, almonds, pistachios, or pine nuts are all great options. 
    • Honey: We use regular honey to drizzle on top, but spicy honey would be a fun way to add a little kick.  Maple syrup is also a  great alternative to the honey.

    Frequently Asked Questions

    Do I need to use Medjool dates?

    No, but they’re preferred for their size and soft, caramel-like texture. If you use smaller dates like Deglet Noor, just keep in mind they’ll hold less filling and may be a bit firmer.

    Can I make these ahead of time?

    Yes! You can make these a day or two in advance and store them in an airtight container in the fridge. Wait to drizzle the honey until just before serving.

    Can I serve them warm?

    Yes! After stuffing, you can warm them in a 350°F oven for about 5–7 minutes, just long enough to soften the cheese and toast the nuts. 

    Do the dates need to be pitted?

    Yes, the pits need to be removed before stuffing. I always buy pitted dates to save time, but if yours aren’t, just make a small slice down one side of each date and pull the pit out by hand.
