Making your own Starbucks toffee nut syrup is so easy and only requires 3 ingredients; toffee bits, sugar and water. This syrup is a fantastic complement to a homemade latte or frappucino, or even just your morning coffee.

I love making coffee shop favorites at home and decided to make Starbucks Salted Caramel Mocha Frappucino. So I hopped on the Starbucks website and saw that one of the ingredients in it is toffee nut syrup. Torani and Monin Toffee Nut Syrup are only available online for me. I was pretty sure I had never seen either one in my area and sure enough, it wasn’t even available at the local spice shop where they have an entire section of Torani Syrups.

A pretty bottle filled with Homemade Toffee Nut Syrup and some heath bits beside it.

I knew I could get toffee chips at the store and in researching that I learned that Heath toffee bits actually already have almonds in them. Am I the only person on the planet that didn’t know toffee was made with nuts?! I guess it makes sense and that is why Heath has a nutty flavor.

So I decided I would make a simple syrup infused with toffee chips. While looking around on the internet I learned that there is a popular tiktok of a toffee syrup recipe. Mine is a little different than the famous tiktok. It’s funny how you come up with an idea and then you find out you are not the only one with that idea.

I did impress Lee with the idea though because he is one of the biggest toffee fans I know. So at least I got some bonus points with him, even if someone else thought of it first. Plus, he got to eat some of the leftover toffee bits on some ice cream while he was waiting for the syrup to get done.

A mason jar and small bottle with toffee nut syrup in them and a bag of english toffee bits next to them.

    Ingredients

See recipe card for exact amounts.

two one cup measuring cups, the one on the left is full of toffee bits and the one on the right is full of sugar.

    Ingredient Notes

toffee bits – I use Heath toffee bits because they is readily available at the grocery store I shop at regularly. There are a couple of other brands or you can make homemade with just butter, brown or white sugar and a little bit of salt. There is a recipe here that looks pretty easy.

sugar – I use white sugar because I looked at Starbucks Toffee Nut Syrup on the internet and it is very light in color. Mine still came out darker than theirs. You can use brown sugar instead of white sugar if you want.

water – tap water works great or you can use filtered or bottled water.

    How to make toffeenut syrup

    1. Add water, sugar and toffee bits to a medium saucepan and bring to a boil over high heat, reduce to low-med heat and simmer for about 7 minutes or until most of the toffee has melted. Stir occasionally.
    2. Let cool 10-15 minutes then strain it using a mesh strainer or cheesecloth, I use a small metal strainer.
    3. Pour into a pretty bottle that is airtight or a mason jar.
The ingredients in the pan, before being cooked on the top and after being cooked on the bottom.

    Substitutions and Additions

    • One cup brown sugar can be used in place of white sugar, or you can use half and half.
    • Add a small amount of almond extract, probably not more than a half teaspoon. Make sure to add it after you take the syrup off of the burner.
    • Add a pinch of salt.

How to use this delicious toffee nut syrup

This yummy toffee syrup can pretty much be used anywhere you would use a toffee sauce.

    Great on these:

    • ice cream
    • pancakes
    • French toast

    Great in these:

    • cold drinks
    • iced coffee drinks
    • hot coffee drinks
    • adult drinks

Did you know that there are 17 Starbucks drinks that have toffee nut syrup in them? Barista HQ has a great article where they tell you about each one.

What’s in a Starbucks Toffee Nut Latte

Espresso shots, toffee nut syrup, and steamed milk are combined and then it is topped with toffee nut sprinkles and whipped cream. This is on my short list of copycat drinks to make.

    Storage

Store in an airtight bottle or jar in the refrigerator for up to 2 weeks, it will start to separate after that.

    Instructions

    • Put water, sugar and toffee bits into a medium saucepan and bring to a boil over high heat, reduce to low-medium heat and simmer for about 7 minutes or until most of the toffee has melted. Give it a good stir occasionally with a heat proof spoon or spatula.
1 cup toffee bits, 1 cup sugar, 1 cup water
    • Let cool 10-15 minutes.
    • Strain it using a mesh strainer or cheesecloth, I use a small metal strainer. Pour into an airtight bottle or mason jar.

    Notes

After the mixture comes to a boil you want it to simmer, according to Merriam-Webster “The meaning of SIMMER is to stew gently below or just at the boiling point”. That is usually somewhere around medium low to medium heat, depending on your stove.
As the syrup cools the small pieces of nuts rise to the top and a gel-like substance collects on the top. You can skim it off or just shake it up to mix it back in before you use it. It really is personal preference because it is totally edible and tasty.

Does this need to be refrigerated? I may have overlooked that somewhere so I apologize if you’ve already answered this!

Made it yesterday for my ice coffee this morning and it’s simple yet delicious! I’m going to try making it with brown sugar next time like the notes suggest.
