    These Oven Roasted Brussels Sprouts with Apples are an easy way to elevate your weeknight dinner or holiday table. With just a handful of simple ingredients, this delicious side dish comes together quickly and is bursting with sweet and savory flavor in every bite. Even if you think you don’t like Brussels sprouts, this recipe might just surprise you. It’s cozy, wholesome, and sure to become a new family favorite!

    This is one of my favorite ways to make Brussels sprouts. The sweet apples pair beautifully with the roasted sprouts—I always try to get a little of both in every bite!     Ingredient Notes

    • Brussels Sprouts: We use fresh Brussels sprouts for the best texture and flavor. While frozen can work in some recipes, they won’t roast the same way and aren’t recommended for this method.
    • Apple: I’ve used many types of red apples in this recipe. The one in the photos is a Cosmic Crisp, but I regularly use Fuji, Honeycrisp, Red Delicious, or Pink Lady. Basically, whatever looks fresh and crisp at the store.
    • Oil:Olive oil adds a nice, rich flavor and is a healthier choice, but canola or vegetable oil will work in a pinch.
    • Seasonings: Just a simple mix of salt and pepper lets the natural flavors of the Brussels sprouts and apples shine.

    Step 1: Spread the chopped Brussels sprouts and apples in a single layer on a sheet pan.

    Step 2: Drizzle with with olive oil and sprinkle with salt and pepper; toss to coat. Roast for 25-30 minutes or until brown.

    Additional Add-Ins

    • Add a yellow onion, cut into chunks, for extra sweetness and depth of flavor.
    • Top the finished dish with roasted nuts like pistachios, walnuts, or pecans for a bit of crunch and richness.
    • Finish with a drizzle of fresh lemon juice, maple syrup, or balsamic vinegar to brighten or sweeten the final flavor—whichever suits your mood!

    How long will leftovers stay good?

    Store in an airtight container in the fridge for up to 3 days. 

    What’s the best way to reheat these?

    For best results reheat in the microwave. They can be reheated in the oven, but they will brown more (speaking from experience here!).

    Ingredients
      

    • 1 pound Brussels sprouts
    • 1 apple
    • 1 ½ tablespoons olive oil
    • ½ teaspoon salt
    • ½ teaspoon black pepper

    Instructions
     

    • Preheat oven to 425° and spray a rimmed baking sheet pan with cooking spray.

    • While the oven preheats trim the ends off the Brussels sprouts and cut in half or quarters if they are very large, chop the apple.
      1 pound Brussels sprouts, 1 apple
    • Spread the Brussels sprouts and apples onto the sheep pan in a single layer. Drizzle with with olive oil and sprinkle with salt and pepper; toss to coat.
      1 ½ tablespoons olive oil, ½ teaspoon salt, ½ teaspoon black pepper
    • Roast for 25-30 minutes or until brown.

    Notes

    Some of the Brussels sprouts will be very brown and the loose pieces will get crispy. 
    If your Brussels sprouts are very small make the apple pieces small too and reduce the cooking time a little bit.
