    Fluffy Scrambled Eggs with Cheese

    This cheesy scrambled eggs recipe is next level. All you need are eggs, butter, salt and a little pepper to make perfect scrambled eggs that are topped with delicious melty cheese. With our easy recipe and simple tips you can have the best cheesy scrambled eggs on the table in about 5 minutes!

    Eggs are the perfect breakfast because they are so quick and easy. The great thing about eggs is that they are nutrient dense. Healthline has a great article explaining the daily values and other health benefits the egg has to offer. 

    We usually add some whole grain toast and fresh fruit for a complete and healthy meal.

    A carton of a dozen eggs, salt and pepper shakers, a spoon half full of butter and ¼ cup of shredded cheese.

    Ingredient Notes

    eggs – we use large eggs and fresh eggs are best. 

    cheese – we use whatever cheese we have on-hand, virtually any cheese will work.

    butter or margarine – real butter or margarine work great, I even use I Can’t Believe It’s Not Butter to make these cheesy eggs just a little bit better for us. 

    seasonings – a pinch of salt and a sprinkle of black pepper.

    How to make the best scrambled eggs with cheese

    1. Crack the eggs open into a small bowl and whisk with a fork until light and fluffy.
    2. Heat a nonstick skillet over medium heat and add butter, when melted pour the eggs into the pan.
    3. The eggs will begin to cook immediately. After about 30 seconds, using a silicone spatula, start pulling the eggs toward the center of the pan. Sprinkle with salt and pepper and continue to move the egg mixture around, for about 2 minutes. 
    4. Add cheese to the top of the eggs and stir them around until the cheese melts, about 30 seconds.

    Tips

    • Use a nonstick skillet that is the appropriate size (a stainless steel pan will work if you don’t have a non-stick pan). A small skillet is the perfect size for one serving of two eggs.
    • A silicone spatula is heat proof making it a better choice than a rubber spatula that might melt. 
    • Cook the eggs to your desired doneness, some people prefer a soft scramble and others prefer a hard scramble.

    Substitutions & Additions

    With just 5 ingredients there really aren’t too many things to swap out or add, below are a couple of suggestions.

    • Swap some or all of the butter with olive oil, canola oil, avocado oil or bacon grease instead of butter. I gotta tell you though, the butter adds great flavor. 
    • Use your favorite cheese.
    • Top your scrambled eggs with chopped fresh parsley, chives, green onions, or diced tomatoes.

    When should you add cheese to scrambled eggs?

    Add shredded cheese to the eggs after they are mostly cooked, about 30 seconds before taking them off the heat. 

    What cheese goes best with eggs?

    There really are no rules when it comes to adding cheesy deliciousness to eggs. Cheddar cheese, feta, pepper jack, monterey jack, goat cheese, or even cream cheese all transform ordinary eggs into something special. 

    Should you add milk to scrambled eggs?

    It depends on who you talk to. According to Southern Living “The milk dilutes the eggs’ flavor, making them rubbery, colorless, and similar to what you would find at a school cafeteria”. They go on to say that the only dairy you need to make delicious scrambled eggs. So that means you don’t need to add heavy cream either. 

    What not to do when making scrambled eggs?

    • Don’t add liquid to them, it just isn’t necessary. 
    • Don’t cook them on high heat, medium low heat to medium heat is perfect.
    • Don’t under mix them, you want to beat them with a fork to add some air.
    • Don’t cook them too long or they will become dry and crumbly. 

    Storage & Reheating

    I don’t recommend storing and reheating eggs because they will be an unpleasant texture when reheated.

    Ingredients
      

    • 2 eggs
    • ½ tbsp butter
    • salt to taste
    • pepper to taste
    • ¼ cup shredded cheese

    Notes

    This recipe is more of a guideline, I don’t actually measure the butter I just use about one-half tablespoon of butter per 2 eggs.
