My favorite Peanut Butter Cookie recipe!
Peanut Butter Cookies are tender, chewy, and delicious! This is an old-fashioned peanut butter cookie recipe that I got from my Betty Crocker Cookbook. I have had this cookbook since I first got married and it has a lot of great recipes.
One thing that sets this recipe apart from other peanut butter cookie recipes is that you use half shortening and half butter. I think it gives the cookie a nice chewy texture.
These Peanut Butter Cookies are also good to make around Christmas, as a nice compliment to traditional Christmas cookies. I also made them for my husband’s bosses on Boss’s Day, and out of the three different cookies I made, these were the favorite.
These cookies are not overly sweet and have big peanut butter flavor. I like that A LOT. They are also a sturdy cookie, so they travel well. This makes them great to send with the kids or take on a picnic. I am going to try them with mini chocolate chips next time, because I think that sounds really good.

Peanut Butter Cookies
Ingredients
- 1/2 cup sugar +additional
- 1/2 cup brown sugar
- 1/2 cup peanut butter
- 1/4 cup butter, softened
- 1/4 cup shortening
- 1 egg
- 1 1/4 cup flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt

Instructions
- Preheat oven to 375°.
- Cream 1/2 cup sugar, brown sugar, peanut butter, butter, shortening and egg in a large bowl with an electric mixer.
- Stir in flour, baking soda, baking powder and salt.
- Shape into 1 1/4" balls and place 3" apart on an ungreased cookie sheet. Flatten with a fork dipped in sugar.
- Bake 9-10 minutes or until golden brown and set. Remove from cookie sheet after 5 minutes and put on a wire rack.
