This is a soft, moist oatmeal cake.

Ingredients

  • 1 1/2 cup boiling water
  • 1 cup old fashioned oatmeal
  • 1/2 cup butter (softened)
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cup flour (all-purpose)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon

Directions

1. Preheat oven to 350°
2. Grease a 13" X 9" pan.
3. Pour boiling water over oatmeal in a small bowl and set aside.
4. Cream butter, brown sugar, sugar, and eggs with an electric mixer.
5. Add flour, baking soda, salt, and cinnamon to creamed mixture alternately with the oatmeal mixture.
6. Pour into pan and bake for 25-30 minutes or until toothpick inserted in the center of the cake comes out clean.
