A Lighter Way to Enjoy Pizza Night
I was inspired to make this pizza because I love the thin crust Spinach & Feta pizza at Dominoes. Have you ever tried it? If not, you’re missing out. It’s got a delicious garlic parmesan cheese sauce, mozzarella and feta, and fresh spinach.
We are trying to eat a healthier, low calorie diet and getting pizza out totally blows that. So I set out to make a homemade version that doesn’t have as many calories, or as much sodium.
I decided I would use lavash bread for the crust. It’s way lower in calories and much better for us than traditional pizza dough. I really like it and so did my husband. We love crispy pizza crust and this combination of toppings is delicious.

Ingredient Notes
- Whole Wheat Lavash Bread: I buy Joseph’s at Walmart. It’s on the aisle with all the other breads. It ‘s also available at Trader Joe’s, Whole Foods, Kroger brand stores, some local ethnic grocery stores and of course, Amazon.
- Pizza Sauce: We like Prego Roasted Garlic Parmesan sauce for this lavash bread pizza recipe. Use your favorite brand.
- Cheese: Feta cheese crumbles and shredded mozzarella work perfectly for this recipe.
- Fresh Spinach: We use fresh spinach leaves that are chopped into strips. Baby spinach or regular spinach is fine.
Why Lavash Bread Works for Pizza
Lavash bread works well for pizza because it bakes up thin and crispy in just minutes. Pre-baking the crust helps it hold the sauce and toppings without getting soggy, while still keeping that crunchy cracker-like texture.
It’s also lighter and lower calorie than traditional pizza dough, making it perfect for quick lunches or easy weeknight dinners.
How to Make
- Preheat the oven to 400°. Place lavash bread directly onto the oven rack. Cook for 4-5 minutes, turning over after 2 ½ minutes.
- Meanwhile, cut spinach leaves into strips and line a rimmed baking sheet with parchment paper.
- Place baked lavash bread on baking sheet. Spread sauce on top of the lavash leaving about an inch on the edges of the pizza. Add the cheeses and then the chopped spinach.
- Bake in a preheated oven for 7-8 minutes, or until cheese melts, sauce is hot, and spinach wilts a little.
- Cut with a pizza cutter into eight pieces.
Recipe Note: This has a cracker-like crust and has very crispy edges. The edges have to be crispy or the middle will be soggy.

Tips
- Make sure your oven rack is as close to the center as possible.
- Be sure to bake the lavash bread without toppings first to prevent a soggy pizza.
- Because this is a thin crust pizza you don’t want to overload it with toppings.
Variations & Substitutions
The sky’s the limit when it comes to topping variations and combinations for this pizza. This can be made with traditional marinara sauce, pesto sauce, or bbq sauce and your favorite toppings. Just remember not to overload the crust or you won’t be able to pick it up.

Lavash bread is not gluten free because it contains wheat flour. If you need a gluten-free option, try a gluten-free flatbread instead.
While lavash bread isn’t low carb on it’s own, it’s a low carb alternative. Traditional pizza crust typically has 20-30 grams of carbs.
