What kind of chicken to use on this Chicken & Broccoli Salad?
The whole idea of this meal is to make it as easy and quickly as possible.
Lee and I both work full time, and while I wish I had time to make elaborate meals that take quite a bit of time to make, it just isn’t doable for us.
So, we use a store-bought rotisserie chicken, or my Crockpot Whole Chicken.
What you see in the photos is a store-bought rotisserie chicken.
We did not use the entire chicken for this recipe.
The recipe from Southern Living, that inspired me to make this recipe, uses fried chicken tenders.
You could pick some up to make this, or use leftovers.
We wanted to make this as good for us as possible and that is why we chose to use a rotisserie chicken and homemade dressing.
I have found that making simple changes like this, here and there, results in the dish being healthier overall.
We do this with many dishes and it has helped us to lose weight.
This isn’t the only change we made though.
We basically changed everything – the way we eat, drink, sleep and exercise.
Baby steps though, first one change, then another and another.

Chicken & Broccoli Salad
Ingredients
- 2 1/2 cups broccoli crowns
- 2 cups cooked chicken rotiserrie, nuggets or tenders
- 3/4 cup grapes cut in half
- 1/2 cup shredded cheese
- 1/4 cup red onion thinly sliced
- 3 tbsp sliced almonds
- 1/2 cup Buttermilk Honey Mustard Dressing or your favorite store-bought

Instructions
- Layer the ingredients onto two dinner plates.
