White Chocolate Chip Craisin Muffins
Here is one more recipe that I seem to like around the holidays. White Chocolate Chip Craisin Muffins are a grown-up kind of muffin that even the kids will love.
I can’t get enough craisins (dried cranberries), especially this time of year.
We have eaten craisins in pre-made foods that we bought out for a while, but the first time I made a dish with them was this Broccoli Salad with Creamy Feta Dressing.
That recipe only calls for 1/2 cup of dried cranberries and so I had a ton leftover.
So, I decided to make White Chocolate Chip Craisin Cookies.
Oh boy! I love those cookies so much that I made a batch to share with my co-workers this holiday season.
The recipe I used to make these White Chocolate Chip Craisin Muffins is a chocolate chip muffin recipe from Genius Kitchen.
I changed it by swapping the milk chocolate chips with white chocolate chips and craisins.
Cooking and baking is all about learning methods and then swapping ingredients to either change them or make them into something you like better.
Tips for making White Chocolate Chip Craisin Muffins (or any muffin):
Mix all of the wet ingredients together and mix all of the dry ingredients together separately, then mix them together.
Do not over mix; just mix until there isn’t any dry ingredients visible. Over mixing will make a tough muffin.
If using fresh fruit it is best to mix the fruit with a little flour to help them stay suspended in the batter and not sink to the bottom.
Do not over-bake. Bake your muffins only until a toothpick inserted into the center comes out clean, or with just a few crumbles.
White Chocolate Chip Craisin Muffins
Ingredients
- 2 cups flour
- 1/3 cup brown sugar
- 1/3 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2/3 cup milk
- 1/2 cup butter melted and cooled
- 1 tsp vanilla
- 2 eggs
- 1 cup white chocolate chips
- 1 cup craisins

Instructions
- Preheat oven to 400°. Spray 12 muffin cups with cooking spray or line with paper liners.
- Stir the flour, sugars, baking powder and salt together in a large bowl.2 cups flour, 1/3 cup brown sugar, 1/3 cup sugar, 2 tsp baking powder, 1/2 tsp salt
- Combine the milk, butter, vanilla and eggs in a medium bowl with a whisk.2/3 cup milk, 1/2 cup butter, 1 tsp vanilla, 2 eggs
- Add the milk mixture to the flour mixture and stir until just combined. Do not overmix.
- Stir in white chocolate chips and craisins.1 cup white chocolate chips, 1 cup craisins
- Divide between muffin cups and bake for 15-20 minutes or until a toothpick inserted into one of the muffins comes out clean.
- Remove muffins from pan and cool on a wire rack for 5 minutes.

Could these be frozen singly after baking?
Yes, they can be wrapped tightly in foil or kept in a zip top bag in the freezer for up to 3 months.
